Beef Tacos With Caramelized Onions

  1. Place beef in a large pot.
  2. Cover with beef broth.
  3. Add ½ teaspoon cumin, ½ teaspoon chili powder, and ¼ teaspoon black pepper.
  4. Bring to a boil.
  5. Cover and simmer for 1½ hours.
  6. Remove cooked beef from broth. Cool.
  7. Slice off very thin slices of beef against the grain; cut into small pieces. Set aside or refrigerate.
  8. Heat oil in a large skillet on medium high. I prefer using my biggest cast iron skillet because it does a really good job caramelizing the onions and browning the meat.
  9. Add the onions to the oil.
  10. Sprinkle with ¼ teaspoon sugar. Cook for approximately 20 minutes, stirring occasionally until onions are caramelized to a deep golden brown.
  11. Place yellow or red pepper(s) and jalapeño(s) on plate or cutting board, sprinkle with ¼ teaspoon sugar and let sit until ready to add to onion mixture.
  12. Add yellow pepper(s) and jalapeño pepper(s) to onion mixture and cook for 10 minutes.
  13. Mix in the beef, cumin, chili powder, salt, and black pepper.
  14. Cook until meat is beginning to brown and is heated through. Add oil if meat is sticking to bottom of pan.
  15. Serve on steamed corn and/or flour tortillas along with side dishes mentioned above. Check out my technique for how to steam tortillas in the techniques section of my cookbook.


Helpful Hint: You can cook the beef earlier in the day or even the day before and refrigerate until needed.

Helpful Hint: Let the beef broth cool and then freeze for use next time you make beef tacos.

To assemble a soft taco:

Lay steamed tortilla flat on a serving plate. Spread one tablespoon of refried beans in center of tortilla. Add 1 to 2 tablespoons of beef mixture. Top with 2 tablespoons Mexican rice, cheese, 1 tablespoon guacamole, 2 tablespoons chopped lettuce, 1 tablespoon salsa fresca, and 1 tablespoon sour cream.

Roll one side of tortilla over fillings. Cover with other side of tortilla. Fold bottom up and hold with your hand while eating so that the fillings do not fall out.

Note that I gave you amounts of fillings to place in your taco. Portions may vary based on the size of your tortilla and which fillings you like the best or least. Make it to suit your tastes and enjoy!
