Salted Caramel Oatmeal Brownies

Dry Ingredients For Butterscotch Crust:

  1. Preheat oven to 350°.
  2. Grease sides of baking pan and set aside.
  3. In a medium bowl, whisk together flour, baking soda, and salt for butterscotch base.
  4. Add brown sugar and oats and mix well.
  5. Stir in melted butter until mixture is crumbly.
  6. Press the butterscotch crust into the baking pan.
  7. Sprinkle the coarse sea salt over the butterscotch base.
  8. Bake for 12 to 15 minutes, or until golden brown.
  9. While the crust is baking, prepare the brownie topping.
  10. In a medium saucepan melt the unsweetened chocolate along with the butter on low heat, stirring constantly.
  11. Remove melted mixture from the heat.
  12. Using a big spoon or spatula, stir in the brown sugar.
  13. Add the vanilla and stir.
  14. Stir in the eggs.
  15. Add the dry ingredients and stir until blended.
  16. Spread the brownie mixture over the baked butterscotch crust.
  17. Bake for 30 to 35 minutes until brownies begin to pull away from the sides of the pan and a toothpick inserted in center comes out clean.
  18. Cool, cut and serve.


These are very rich and satisfying brownies. The caramel-like flavor of the oatmeal base, paired with the sea salt and the brownie topping, will leave your mouth watering for more.
