Cherry Chocolate Teacakes

Instructions

  1. Preheat oven:
    Standard Oven: 400°   |   Convection Oven: 375°
  2. In a stand mixer using the paddle attachment, cream butter and confectioners sugar until light and fluffy.
  3. Mix in vanilla.
  4. Add dry ingredients and mix on low speed until incorporated.
  5. Add cherries, mini chocolate chips and optional nuts, mixing on medium speed until dough pulls together.
  6. Shape into 1-inch balls.
  7. Place on ungreased cookie sheet.
  8. Bake until set, but not brown; about 10 to 12 minutes.
  9. Cool cookies on a rack.
  10. Once cookies are cool prepare confectioners sugar icing for baked goods:
  11. In a small saucepan on low heat, melt 2 tablespoons butter.
  12. Remove from heat and whisk in confectioners sugar and vanilla.
  13. Whisk in 1 teaspoon of hot water at a time, until desired consistency is reached; you should be able to easily coat a spoon.
  14. Dip tops of cooled cookies in icing and return to cooling rack.
  15. NOTE: If icing becomes too thick whisk in a teaspoon of hot water.
  16. Allow icing to set.
  17. Serve.
