Easy Black Bean Soup


For  Single recipe    (Makes 4 one cup servings)

Vegetables to Sauté:

Black Beans and Chicken Broth:


Lemon and Lime Juice:

Optional Toppings:


  1. In a medium-sized saucepan, heat oil on medium heat.
  2. Add chopped onion, garlic, jalapeño, and serrano peppers.
  3. Sauté until vegetables are soft and golden brown in color; 5 to 10 minutes.
  4. In a blender, puree beans and chicken broth until beans are coarsely ground up.
  5. Pour bean mixture into saucepan.
  6. Add seasonings.
  7. Bring to a simmer, cover, and cook for 20 minutes.
  8. During the last 5 minutes of cooking time, add the lemon and lime juice.
  9. Ladle soup into small serving bowls (about 1 cup per bowl).
  10. Sprinkle with 1 to 2 teaspoons queso cheese (optional).
  11. Add a dollop of sour cream (optional).
  12. Sprinkle with freshly chopped cilantro.
  13. Serve.
