No Bake Chocolate Peanut Butter Oatmeal Cookies

  1. Cover the bottoms of 2 cookie sheets with waxed paper, set aside.
  2. Melt butter in a large saucepan on low heat.
  3. Add sugar, cocoa, and milk to the saucepan. Whisk until incorporated.
  4. Bring cocoa mixture to a simmer on medium-low heat. Simmer for 1 minute.
  5. Remove saucepan from heat.
  6. Add peanut butter and vanilla to saucepan and whisk until mixed in.
  7. With a large spoon or spatula stir oats into pan; mixing gently until incorporated.
  8. Drop by tablespoon onto the waxed paper lined cookie sheets.
  9. Refrigerate for 20 minutes or until the cookies are firmly set up.
  10. Serve.


Makes approximately 2 dozen cookies.
