Chocolate Chips:

  1. Preheat oven to 375°. If using a convection oven choose the pure convection setting at 350°.
  2. Thoroughly cream butter and peanut butter.
  3. Add sugar and cream until light and fluffy.
  4. Add egg and vanilla and mix in.
  5. Add dry ingredients and mix until well-blended.
  6. Mix in chocolate chips.
  7. Shape into 1-inch balls.
  8. Place 2-inches apart on an ungreased cookie sheet.
  9. Criss-cross each ball with fork tines. If the fork is sticking too much, dip it in flour before criss-crossing.
  10. Bake for 10 minutes.
  11. Remove from oven, cool slightly on baking sheets then remove cookies to a cooling rack.

Makes approximately 2½ dozen cookies.

What kind of peanut butter should you use? I prefer salty and crunchy for my cookies, but it is really personal choice.
