Peeling Broccoli Stems
The most tender and tastiest part of broccoli is the stem.
- I always peel the stem and use it rather than throwing it into my compost bin.
- To prepare broccoli stems for cooking first remove florets from broccoli stems.
- Using a paring knife, peel outer layer of tough, fibrous matter from stem.
- After peeling you will be left with a whitish green stem.
- Cut off bottom of stem, discard.
- Slice stem into small pieces, cook along with florets.
