Peeling Broccoli Stems



  1. The most tender and tastiest part of broccoli is the stem.
  2. I always peel the stem and use it rather than throwing it into my compost bin.
  3. To prepare broccoli stems for cooking first remove florets from broccoli stems.
  4. Using a paring knife, peel outer layer of tough, fibrous matter from stem.
  5. After peeling you will be left with a whitish green stem.
  6. Cut off bottom of stem, discard.
  7. Slice stem into small pieces, cook along with florets.
