Quiche Lorraine


Bacon or Ham:


Egg Mixture:


  1. Prepare pastry for 9-inch One-Crust Pie one-crust pie and set aside.
  2. Preheat oven to 400°. If you are using a convection oven choose the convection bake setting at 375°.
  3. Fry bacon until crisp, drain on paper towels.
  4. Crumble bacon into pastry-lined pan.
  5. Sprinkle shredded cheese over the bacon.
  6. In a medium bowl beat together eggs, half and half, and spices.
  7. Pour the egg mixture over the bacon and cheese in the pie pan.
  8. Bake for 30 to 40 minutes, until a knife inserted halfway between the center and the edge comes out clean.
  9. Cool 5 to 10 minutes before serving.


Serves 4 to 6.

Do Ahead Tip: Make crust ahead of time and refrigerate up to 8 hours before baking.

Do Ahead Tip: Shred cheese and cook bacon ahead of time and refrigerate until you are ready to assemble the quiche.

Refrigerate unused portions.

Reheat, uncovered in a 350° oven for 15 to 20 minutes.
