Salsa Fresca



  1. Add all ingredients to a medium-sized bowl.
  2. Gently toss together.
  3. Serve immediately.


Do ahead tip: You can place the jalapeño pepper, chopped scallions, garlic, and cilantro in a bowl a few hours before adding the rest of the ingredients. Cover and refrigerate. Just before serving add the tomatoes, lime juice, and salt.

This recipe is best served fresh. The tomatoes and cilantro tend to get mushy if left overnight.

Serve on tortilla chips or better yet, serve with chicken tacos with caramelized onions or beef tacos with caramelized onions.
