Sliced Oat Crisps

Instructions

  1. In a work bowl cream butter.
  2. Add sugar and mix until butter and sugar are light and fluffy.
  3. Add vanilla and mix in.
  4. Add flour and optional salt and mix on low speed until blended.
  5. Add the oats to the work bowl and mix in on low speed.
  6. Place a 24-inch long sheet of waxed paper on a flat surface.
  7. Place the dough in the center of the waxed paper.
  8. Gently form the dough into a rectangular log about 3-inches wide by 12-inches long.
  9. Wrap the waxed paper around the dough making it airtight by folding and tucking the ends under the dough.
  10. Refrigerate for 4 hours or overnight.
  11. Preheat oven:
    Standard Oven: 325°   |   Convection Oven: 300°
  12. Slice the dough into thin ⅛-inch slices.
  13. Place dough slices 1-inch apart on an ungreased cookie sheet.
  14. Bake for about 20 minutes, or until golden brown.
  15. Immediately remove from cookie sheet to a cooling rack. Use care as these are very delicate!
  16. Serve.
