Waffles

For  Single Recipe    (Makes ten 8-inch waffles)

Instructions

  1. Mix flour, baking powder, baking soda, sugar and salt in a large bowl.
  2. In another bowl whisk together eggs, melted butter and buttermilk.
  3. Add moist ingredients to dry ingredients. Gently mix together with a spatula until just incorporated.
  4. Heat a waffle griddle. Pour batter over the waffle iron according to your waffle iron's instructions. I have an 8-inch square waffle iron. I make the shape of an X on the griddle (½ cup of batter for each line) and when I close the lid the batter spreads to make a square waffle.
  5. Cook until golden brown.
  6. Serve immediately or keep warm in a single layer on a rack in a 200° oven.
  7. Serve with butter and maple syrup.

Comments

I often make a double recipe and after the waffles have cooled freeze them in a plastic container. My kids thaw them in the microwave for 10 seconds and then toast and eat for a quick breakfast.
