Beef Tacos With Caramelized Onions
- Marinating beef: 24 hours
- Instant Pot beef roast: 1 hour
- Cooling and chopping beef: 1 hour
- Making tacos: 30 minutes
Ingredients
For Single Recipe
(serves 4 to 6)
Onion and Pepper Mixture:
- 2 tablespoons vegetable oil that can withstand high heat
- 1 onion, chopped
- ½ yellow or red pepper, chopped
- 1 jalapeño pepper, chopped (seeded for less heat)
- ¼ teaspoon sugar
Spices:
- 1 teaspoon ground cumin
- ½ teaspoon ground chili powder
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
Beef:
- Corn or flour tortillas, steamed (plan on 2-3 tortillas per person)
Accompaniments For Assembling Beef Tacos:
- 1 can refried beans, heated
- ¼ head iceberg lettuce, chopped
- 1 cup cheddar cheese, grated
- 1 recipe of Salsa Fresca
- 1 recipe of Guacamole
- 1 recipe of Mexican Rice
- ½ cup sour cream, optional

Instructions

24 to 48 hours in advance of preparing the tacos, prepare the Instant Pot Southwestern Beef Chuck Roast as instructed.
- DO AHEAD TIP: Prepare Instant Pot Southwestern Beef Chuck Roast a few days to a month in advance and freeze in 2 cup containers for later use. Thaw out as needed.
- Once your have cooked and chopped the beef you will be ready to make beef tacos with caramelized onion.
- Heat oil in a large skillet on medium high. I prefer using my biggest cast iron skillet because it does a really good job caramelizing the onions and browning the meat.
- Add the onions, yellow pepper and jalapeño(s) peppers to the oil.
- Sprinkle with sugar. Cook for approximately 20 minutes, stirring occasionally until onions are caramelized to a deep golden brown.
- Add the beef, cumin, chili powder, salt, and black pepper.
- Cook until meat is beginning to brown and is heated through. Add oil if meat is sticking to bottom of pan.
- Serve as per instructions below.

Lay tortilla flat.
Spread refried beans down the center of tortilla. Top with the meat mixture, Mexican rice, grated cheese, guacamole, chopped lettuce, salsa fresca, and sour cream.
Grasp one side of the tortilla and fold it over the meat and toppings until it reaches the opposite side of the tortilla.
Pick up the taco by grasping the top, place your other hand on the bottom and enjoy.
