Brewed Chai Tea Concentrate (For Making Chai Tea Lattes)
Ingredients
For Single recipe
(Makes four 1 cup servings)
Water:
Spices:
- 2 cinnamon sticks
- 1 large piece fresh ginger, peeled and chopped into a few pieces
- 1 teaspoon whole cardamom pods
- 3 whole star anise
- 1 teaspoon whole cloves
- 1 teaspoon black peppercorns
- ¼ teaspoon ground black pepper
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
Optional Red Cayenne Pepper:
- ⅛ teaspoon red cayenne pepper (use for a very spicy mix)
Tea Bags:
- 15 black tea bags (cut off paper tags)
Brown Sugar and Vanilla:
- ¼ to ⅓ cup brown sugar (Use more or less sugar according to your taste)
- 2 teaspoons vanilla

- 2 teaspoons whole cardamom pods
- 6 whole star anise
- 2 teaspoons whole cloves
- 2 teaspoons black peppercorns
- ½ teaspoon ground black pepper
- 2 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg
Optional Red Cayenne Pepper:
- ¼ teaspoon red cayenne pepper (use for a very spicy mix)
Tea Bags:
- 30 black tea bags (cut off paper tags)
Brown Sugar and Vanilla:
- ½ to ⅔ cup brown sugar (Use more or less sugar according to your taste)
- 1 tablespoon + 1 teaspoon vanilla
Instructions

NOTE: The red cayenne pepper is optional. This will make the mix very spicy! Use only if you like extra heat in your chai concentrate.
- Place all ingredients in a medium saucepan.
- Bring to a boil. Turn down heat to low, cover and simmer for 20 minutes.
- Cool then strain using a fine sieve, coffee filter, or cheesecloth.
Comments
If you are on a sugar-free diet, omit the sugar and either use a sugar substitute or no sugar at all.If you are sensitive to caffeine you can use decaffeinated tea bags for your mix.
Refrigerate unused portions of the chai concentrate, it will keep in a covered container for 1 week.
Note: I freeze 1 cup portions in freezer containers. When I want a cup of chai tea I heat 1 portion on the stove and add steamed milk.
