Chocolate Streusel Coffeecake

Ingredients
- 8 tablespoons butter, melted (1 stick)
- ¾ cup brown sugar
- ¼ teaspoon salt
- ⅔ cup flour
- ½ cup unsweetened cocoa powder
- ⅓ cup coconut
- ⅔ cup oats
- ⅓ cup walnuts, finely chopped (optional)
Coffeecake Ingredients to be Creamed and Mixed:
- 1 stick (½ cup) butter, softened
- 1 cup sugar
- 2 eggs
Dry Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
Moist Ingredients:
- 1¼ cups sour cream or plain yogurt
- 1 teaspoon vanilla
Instructions

Preheat oven to 350°.
- Grease a 13x9x2 oblong baking pan.
- In a medium-sized bowl prepare Chocolate Streusel Topping; set aside.
- In a large work bowl beat butter and sugar on high speed until lightened in color and texture, 1 to 2 minutes.
- Beat in eggs one at a time.
- In a separate bowl mix together sour cream and vanilla; set aside.
- Add dry ingredients to butter mixture.
- With mixer on a low speed, mix the dry ingredients into the butter and sugar mixture.
- Add sour cream mixture and beat on medium speed until batter is smooth, scraping sides of bowl as necessary.
- Pour the batter into the greased pan and spread evenly.
- Sprinkle the batter with the Chocolate Streusel Topping.
- Bake 30 to 40 minutes or until toothpick in center comes out clean.
- Cool for 15 to 30 minutes.
- Serve warm.
