Citrus Herb Marinade
Ingredients
- ¼ cup olive oil
- Zest of one lemon
- 2½ tablespoons fresh lemon juice
- 1½ tablespoons orange juice or dry sherry
- ⅓ cup chopped fresh parsley
- 1½ teaspoon dried thyme or other appropriate herb
- ½ bay leaf finely crumbled
- 1 clove garlic, minced
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
Instructions

Mix all ingredients together in a small bowl.

Use immediately or cover and refrigerate for up to 1 week.I use this marinade for chicken kebobs that I am going to cook on the grill. I usually marinate the chicken with ½ the marinade and refrigerate for two hours. The other half goes on any vegetables I plan to grill and they can marinate for two hours, as well.
