Cranberry Orange Walnut Delights
Ingredients
Ingredients To Be Creamed:
- 1 cup butter, softened
- ¼ cup confectioners sugar
Vanilla:
Dry Ingredients:
- 2¼ cups flour
- ¼ teaspoon ground cardamom
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon salt (omit salt if using salted butter)
Cranberries, Orange Zest, Walnuts:
- ¾ cup dried cranberries, coarsely chopped
- ¾ cup walnuts, finely chopped
- Zest of 1 orange
Orange Glaze:
- 2 tablespoons butter
- 1 cup confectioners sugar
- 2 teaspoons fresh orange juice
- 1 to 3 teaspoons hot water

Preheat oven:
Standard Oven: 400° | Convection Oven: 375°
- In a stand mixer using the paddle attachment, cream butter and confectioners sugar until light and fluffy.
- Add vanilla and mix until incorporated.
- Mix in flour, spices, and salt.
- Add cranberries, walnuts, and orange zest mixing until dough comes together.
- Shape dough into 1-inch balls.
- Place about 1-inch apart on ungreased cookie sheet.
- Bake until set but not brown, 10 to 12 minutes.
- Cool cookies on a rack.
- Once cookies are cool prepare icing:
- On low heat, melt 2 tablespoons butter in a small saucepan.
- Remove from heat and whisk in confectioners sugar and orange juice.
- Whisk in 1 teaspoon of hot water at a time, until desired consistency is reached; you should be able to easily coat a spoon.
- Dip tops of cooled cookies in icing. If icing becomes too thick whisk in a teaspoon of hot water.
- Allow icing to set.
- Serve.
