Easy Peanut Butter Drop Cookies With Roasted Peanuts

Instructions

  1. Preheat oven:
    Standard Oven: 375°   |   Convection Oven: 350°
  2. Lightly grease cookies sheets and set aside. Click here to learn more about how to grease cookie sheets.
  3. Thoroughly cream butter and peanut butter.
  4. Add sugar and cream until light and fluffy.
  5. Add egg and vanilla and mix in.
  6. Add dry ingredients and mix until well-blended.
  7. Coarsely chop roasted peanuts.
  8. Add chopped peanuts to work bowl and mix in.
  9. Spoon batter into loosely formed 1½-inch balls onto prepared cookie sheets spacing about 2-inches apart.
  10. Bake for 8 to 10 minutes or until golden brown.
  11. Remove from oven, cool slightly on baking sheets then remove cookies to a cooling rack.

Makes approximately 2½ dozen cookies.

An all-time favorite cookie with a crisp peanut butter infused exterior and a soft and chewy interior loaded with just the right amount of crunchy roasted peanuts.

Salted or unsalted roasted peanuts? If using salted butter try unsalted peanuts or a good compromise would be to use lightly salted peanuts.
