Easy Peanut Butter Drop Cookies With Roasted Peanuts

Ingredients
Ingredients to be Creamed:
- ½ cup butter (1 stick); softened
- ½ cup creamy peanut butter
- 1 cup brown sugar
Moist Ingredients:
Dry Ingredients:
- 1 cup + 2 tablespoons flour
- ¾ teaspoon baking soda
- ⅛ teaspoon salt (omit salt if using salted butter)
Roasted Peanuts:
- ½ cup coarsely chopped roasted peanuts (see comment below)
Instructions

Preheat oven:
Standard Oven: 375° | Convection Oven: 350°
- Lightly grease cookies sheets and set aside. Click here to learn more about how to grease cookie sheets.
- Thoroughly cream butter and peanut butter.
- Add sugar and cream until light and fluffy.
- Add egg and vanilla and mix in.
- Add dry ingredients and mix until well-blended.
- Coarsely chop roasted peanuts.
- Add chopped peanuts to work bowl and mix in.
- Spoon batter into loosely formed 1½-inch balls onto prepared cookie sheets spacing about 2-inches apart.
- Bake for 8 to 10 minutes or until golden brown.
- Remove from oven, cool slightly on baking sheets then remove cookies to a cooling rack.

Makes approximately 2½ dozen cookies.An all-time favorite cookie with a crisp peanut butter infused exterior and a soft and chewy interior loaded with just the right amount of crunchy roasted peanuts.
Salted or unsalted roasted peanuts? If using salted butter try unsalted peanuts or a good compromise would be to use lightly salted peanuts.
