Fried Chicken Dumplings

Instructions

  1. Place flour in a medium mixing bowl.
  2. Make a well in the center of the flour.
  3. Slowly add the boiling water, mixing with a fork.
  4. Add cold water and using your hands mix the dough until smooth.
  5. Cover the bowl with a damp flour sack towel. Let stand for 15 minutes while preparing filling.
  6. Combine cabbage, chicken, ginger root, scallions, and minced garlic in a medium-sized bowl.
  7. Whisk together rice wine and soy sauce.
  8. Add to cabbage mixture and toss to incorporate; set aside.
  9. Divide dough into 2 equal portions.
  10. Using your hands roll each portion into a 12-inch long piece.
  11. Chop each roll into 12 equal pieces.
  12. Roll each piece between your palms to form a small ball.
  13. Pat each ball flat.
  14. Using a rolling pin, roll each ball into a circle that is about 2½-inches in diameter.
  15. Place 1 tablespoon of filling in center of rolled out ball.
  16. Fold circle over filling to make a half circle.
  17. Pinch seams together to seal, dumpling should resemble a small crescent.
  18. Heat a large non-stick skillet over medium-high heat.
  19. Add 2 tablespoons vegetable oil; heat for 30 seconds.
  20. Carefully place dumplings pleated-side up in the skillet.
  21. Fry until bottoms are golden, about 1 minute.
  22. Carefully add the ⅔ cup boiling water.
  23. Cover and cook over low heat 1 to 2 minutes.
  24. Remove to a platter.
  25. Serve.
