Fried Chicken Dumplings

Ingredients
Dough:
- 1¼ cups flour
- ⅓ cup boiling water
- 2½ tablespoons cold water
Filling:
- 2 tablespoons finely chopped or shredded cabbage
- 2 tablespoons shredded carrot
- ½ cup cooked and finely chopped chicken meat
- ½ teaspoon minced fresh ginger root
- ¼ cup minced scallions
- 1 clove of garlic, minced
- ½ teaspoon rice wine or dry sherry
- 1½ tablespoons soy sauce
Vegetable Oil:
- 2 tablespoons vegetable oil for frying
Water For Steaming:
- ⅔ cup boiling water
- 2 tablespoons soy sauce
- 2 tablespoons water
- 1 teaspoon rice vinegar
- ¼ to ½ teaspoon sriracha

Place flour in a medium mixing bowl.
- Make a well in the center of the flour.
- Slowly add the boiling water, mixing with a fork.
- Add cold water and using your hands mix the dough until smooth.
- Cover the bowl with a damp flour sack towel. Let stand for 15 minutes while preparing filling.
- Combine cabbage, chicken, ginger root, scallions, and minced garlic in a medium-sized bowl.
- Whisk together rice wine and soy sauce.
- Add to cabbage mixture and toss to incorporate; set aside.
- Divide dough into 2 equal portions.
- Using your hands roll each portion into a 12-inch long piece.
- Chop each roll into 12 equal pieces.
- Roll each piece between your palms to form a small ball.
- Pat each ball flat.
- Using a rolling pin, roll each ball into a circle that is about 2½-inches in diameter.
- Place 1 tablespoon of filling in center of rolled out ball.
- Fold circle over filling to make a half circle.
- Pinch seams together to seal, dumpling should resemble a small crescent.
- Heat a large non-stick skillet over medium-high heat.
- Add 2 tablespoons vegetable oil; heat for 30 seconds.
- Carefully place dumplings pleated-side up in the skillet.
- Fry until bottoms are golden, about 1 minute.
- Carefully add the ⅔ cup boiling water.
- Cover and cook over low heat 1 to 2 minutes.
- Remove to a platter.
- Serve.
