Frosted Lemon Teacakes

Ingredients
Ingredients to be Creamed:
- 1 cup butter, softened (2 sticks)
- ½ cup confectioners sugar
Lemon Juice:
- 1 teaspoon fresh lemon juice
Dry Ingredients:
- 2¼ cups flour
- ⅛ teaspoon salt
Lemon Zest, White Chocolate Chips and Walnuts:
- Zest from 1 lemon (2 teaspoons)
- ½ cup white chocolate chips
- ½ cup finely chopped walnuts
Lemon Glaze:
- 2 tablespoons butter
- 1 cup confectioners sugar
- 2 teaspoons fresh lemon juice
- 1 to 3 teaspoons hot water

Preheat oven:
Standard Oven: 400° | Convection Oven: 375°
- Cream butter and confectioners sugar until light and fluffy.
- Add lemon juice mixing to incorporate.
- Mix in flour and salt.
- Add lemon zest, white chocolate chips and walnuts.
- Shape into 1-inch balls.
- Place on ungreased cookie sheet.
- Bake until just set; about 10 minutes.
- Cool on a rack.
- Once cookies are cool prepare the lemon glaze:
- Melt butter on low in a small saucepan.
- Remove from heat and whisk in confectioners sugar and lemon juice.
- Add hot water 1 teaspoon at a time until the glaze is glossy and a good consistency for dipping.
- Dip tips of cooled cookies in the lemon glaze.
- Place on a cooling rack and allow the glaze to set.
- Serve.
