Frosted Lemon Teacakes

Ingredients

Ingredients to be Creamed:

Lemon Juice:

Dry Ingredients:

Lemon Zest, White Chocolate Chips and Walnuts:

Lemon Glaze:

Instructions

  1. Preheat oven:
    Standard Oven: 400°   |   Convection Oven: 375°
  2. Cream butter and confectioners sugar until light and fluffy.
  3. Add lemon juice mixing to incorporate.
  4. Mix in flour and salt.
  5. Add lemon zest, white chocolate chips and walnuts.
  6. Shape into 1-inch balls.
  7. Place on ungreased cookie sheet.
  8. Bake until just set; about 10 minutes.
  9. Cool on a rack.
  10. Once cookies are cool prepare the lemon glaze:
  11. Melt butter on low in a small saucepan.
  12. Remove from heat and whisk in confectioners sugar and lemon juice.
  13. Add hot water 1 teaspoon at a time until the glaze is glossy and a good consistency for dipping.
  14. Dip tips of cooled cookies in the lemon glaze.
  15. Place on a cooling rack and allow the glaze to set.
  16. Serve.
