  1. Place egg whites in a medium-sized bowl.
  2. Add cream of tartar.
  3. Beat egg whites and cream of tartar until foamy.
  4. Beat in sugar, 1 tablespoon at a time.
  5. Continue beating until stiff and glossy.
  6. DO NOT OVERBEAT!
  7. Beat in vanilla.
  8. Follow instructions for adding meringue to pie filling and baking.
