Oatmeal Raisin Spice Muffins
Ingredients
For Single recipe
(12 standard muffins or 6 large muffins)
Oats and Moist Ingredients:
- 1 cup old fashioned rolled oats
- 1 cup buttermilk
- 1 teaspoon vanilla
- ⅓ cup butter melted
- 1 egg, well-beaten
Flavors to Mix In:
- 1½ teaspoons of orange zest
- 3 tablespoons finely grated carrot
- 3 tablespoons finely grated apple
- ⅓ cup packed brown sugar
Dry Ingredients:
- 1 cup flour
- 1 tablespoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground cloves
Raisins and Nuts:
- ½ cup raisins
- ½ cup ground walnuts (optional)

(24 standard muffins or 12 large muffins)

- 2 cups old fashioned rolled oats
- 2 cups buttermilk
- 2 teaspoons vanilla
- ⅔ cup butter melted
- 2 eggs, well-beaten
Flavors to Mix In:
- 1 tablespoon of orange zest
- 6 tablespoons finely grated carrot
- 6 tablespoons finely grated apple
- ⅔ cup packed brown sugar
Dry Ingredients:
- 2 cups flour
- 2 tablespoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
Raisins and Nuts:
- 1 cup raisins
- 1 cup ground walnuts (optional)
Instructions

Preheat oven to 375°.
- Grease muffin pans; set aside.
- In a large bowl combine oats, buttermilk, vanilla, melted butter, egg, and vanilla.
- Add orange zest, carrot, apple, and brown sugar. Mix until incorporated.
- Add flour and spices. Mix until just moistened.
- Mix in raisins and optional nuts.
- Fill greased muffin pans ⅔ full.
- Bake 15 minutes for a standard muffin pan, or until a toothpick inserted in the center of a muffin comes out clean.
- Bake 25 minutes for a large 6-muffin pan, or until a toothpick inserted in the center of a muffin comes out clean.
- Remove from oven. Cool for 5 minutes.
- Using a knife gently follow the edge of each muffin pan and turn muffin out onto a serving platter.
- Serve immediately.
Comments
You can substitute vegetable oil for the melted butter.For perfect muffins stir batter only a few strokes. If over beaten, muffins will be tough and dry.
