Oatmeal Raisin Spice Muffins

Ingredients

For  Single recipe    (12 standard muffins or 6 large muffins)

Instructions

  1. Preheat oven to 375°.
  2. Grease muffin pans; set aside.
  3. In a large bowl combine oats, buttermilk, vanilla, melted butter, egg, and vanilla.
  4. Add orange zest, carrot, apple, and brown sugar. Mix until incorporated.
  5. Add flour and spices. Mix until just moistened.
  6. Mix in raisins and optional nuts.
  7. Fill greased muffin pans ⅔ full.
  8. Bake 15 minutes for a standard muffin pan, or until a toothpick inserted in the center of a muffin comes out clean.
  9. Bake 25 minutes for a large 6-muffin pan, or until a toothpick inserted in the center of a muffin comes out clean.
  10. Remove from oven. Cool for 5 minutes.
  11. Using a knife gently follow the edge of each muffin pan and turn muffin out onto a serving platter.
  12. Serve immediately.

Comments

You can substitute vegetable oil for the melted butter.

For perfect muffins stir batter only a few strokes. If over beaten, muffins will be tough and dry.
