Pecan Pie Bars

Ingredients

8x8x2-inch square baking pan
Crust:
- ¼ cup butter, softened (½ a stick)
- 2 tablespoons sugar
- 1 cup flour
- ⅛ teaspoon salt
Filling:
- 1 egg + 1 yolk
- 6 tablespoons dark corn syrup
- ¼ cup sugar
- 1 tablespoon butter, melted
- ½ teaspoon vanilla
- ⅛ teaspoon salt
Pecans:
- ¾ cup coarsely chopped pecans

Crust:
- ½ cup butter, softened (1 stick)
- ¼ cup sugar
- 2 cups flour
- ¼ teaspoon salt
Filling:
- 3 eggs
- ¾ cup dark corn syrup
- ½ cup sugar
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- ¼ teaspoon salt
Pecans:
- 1½ cups coarsely chopped pecans
Instructions

Preheat oven to 350°.
- Lightly grease baking pan.
- Place butter for crust in a large work bowl and cream.
- Add sugar for crust to butter and cream until light and fluffy.
- Add flour for crust to work bowl and beat on low speed until the mixture resembles coarse crumbs.
- Press the crust mixture into the bottom of the baking pan and ¼-inch up the sides of the prepared pan.
- Bake for 15 minutes or until golden brown.
- Remove from oven.
- Add the filling ingredients to a work bowl and mix until blended.
- Stir in the pecans.
- Pour the pecan filling over the baked crust.
- Bake 25 to 35 minutes or until the filling is set around the edges and the center is slightly firm.
- Cool and cut into 1 or 2-inch bars.
