Waffles
Ingredients
For Single Recipe
(Makes ten 8-inch waffles)
Dry Ingredients:
- 1¾ cups flour
- 1 tablespoon baking powder
- ¼ teaspoon baking soda
- 1 tablespoon sugar
- ½ teaspoon salt
Moist Ingredients:
- 3 large eggs, well beaten
- 8 tablespoons (1 stick) butter, melted
- 1½ cups buttermilk

For Double Recipe
(Makes twenty 8-inch waffles)
Dry Ingredients:
- 3½ cups flour
- 2 tablespoons baking powder
- ½ teaspoon baking soda
- 2 tablespoons sugar
- 1 teaspoon salt
Moist Ingredients:
- 6 large eggs, well beaten
- 12 tablespoons (2 sticks) butter, melted
- 3 cups buttermilk
Instructions

Mix flour, baking powder, baking soda, sugar and salt in a large bowl.
- In another bowl whisk together eggs, melted butter and buttermilk.
- Add moist ingredients to dry ingredients. Gently mix together with a spatula until just incorporated.
- Heat a waffle griddle. Pour batter over the waffle iron according to your waffle iron's instructions. I have an 8-inch square waffle iron. I make the shape of an X on the griddle (½ cup of batter for each line) and when I close the lid the batter spreads to make a square waffle.
- Cook until golden brown.
- Serve immediately or keep warm in a single layer on a rack in a 200° oven.
- Serve with butter and maple syrup.

Comments
I often make a double recipe and after the waffles have cooled freeze them in a plastic container. My kids thaw them in the microwave for 10 seconds and then toast and eat for a quick breakfast.
