Spicy Black Bean Burgers

Ingredients

Black Beans:

Eggs and Sour Cream:

Masa Harina and Spices:

Instructions

  1. Preheat oven to 400°F.
  2. Line a cookie sheet with parchment paper and coat with cooking spray; set aside.
  3. In a colander, rinse and drain the black beans; transfer beans to a large mixing bowl.
  4. Coarsely mash the black beans.
  5. Add and mix in egg and sour cream.
  6. Grate the zucchini making sure to squeeze out any excess moisture.
  7. Add the grated onion, zucchini, jalapeño pepper, garlic, and cilantro to the black bean mixture and mix in.
  8. Add cheddar cheese and toss to incorporate.
  9. In a small bowl, whisk the masa harina with the spices.
  10. Add masa harina and spice mixture to the black bean mixture and incorporate with a large spoon.
  11. Form black bean mixture into 6 large cakes, approximately 4-inches in diameter and ½-inch thick.
  12. Place on lined baking sheet.
  13. Bake for 20 minutes, turning midway through.
  14. Serve on buns with Salsa Roja, Guacamole, and shredded cabbage.

When it comes to toppings use your imagination. Perhaps a little bit of roasted garlic aioli and some pickled jalapeño peppers?
