Instant Pot Apple Butter Pork Chops

Ingredients

For  Single recipe    (serves 2)

Pork Chops:

Seasonings For Rub:

Vegetable Oil:

Chicken Broth:

Apple Butter:

Apple Butter Bourbon Sauce:

Instructions

  1. In a small bowl, whisk together seasonings.
  2. Rub seasonings over pork chops, cover and refrigerate for 30 minutes or up to 2 hours.
  3. 30 minutes before cooking the pork chops make the Apple Butter Bourbon Sauce:
  4. In a small saucepan whisk ⅓ cup apple butter, water, bourbon, and spices.
  5. Simmer uncovered for 15 minutes, stirring occasionally.
  6. Pour sauce into a serving bowl and set aside.
  7. Press "Sauté" on the cooker. Note: Do not use lid when Sautéing.
  8. When the word "Hot" appears on the display add the oil.
  9. Brown pork chops in hot oil for 2 to 3 minutes per side, or until golden brown. If you are cooking 4 pork chops brown 2 at a time.
  10. Place browned pork chops on a plate.
  11. Turn off the Instant Pot.
  12. Add the broth to the Instant Pot and stir to loosen the brown bits from the bottom of the pot.
  13. Spread 1 tablespoon of apple butter over each pork chop.
  14. Place the pork chops, apple butter side up in the bottom of the Instant Pot.
  15. If you are cooking 4 pork chops. Place two pork chops in the bottom of the Instant Pot, add the trivet and place the other 2 on the trivet.
  16. Place the lid on the cooker and lock in place per Instant Pot instructions.
  17. Check to make sure the steam release handle points to "Sealing".
  18. Press the "Manual" or "Pressure Cook" button and set the timer for 10 minutes.
  19. The Instant Pot will automatically build up internal pressure. This can take up to 10 minutes. Once the unit is pressurized a timer will automatically display the amount of cooking time you programmed.
  20. Once cooking is complete allow the Instant Pot to go to the "10-minute natural release" mode of cooling. The cooker will automatically count to 10 minutes while it is in the "Keep Warm/Cancel" mode.
  21. At the end of the 10-minute natural release time press "Cancel" and carefully twist the steam release handle on the lid to "Venting" position. Keep hands and face away from hole on top of the steam release valve to avoid scalding.
  22. Once the steam has escaped and the red float valve has dropped down, carefully unlock the lid and remove pork chops to a serving platter.
  23. Serve with Apple Butter Bourbon Sauce.
