Zucchini Chocolate Cake

Instructions

  1. Preheat oven to 350°.
  2. Grease and flour a 13x9x2-inch oblong baking pan.
  3. In a large work bowl on medium speed mix together sugar, oil, eggs, vanilla and buttermilk for 1 minute.
  4. Grate the zucchini making sure to squeeze out any excess moisture.
  5. Add the grated zucchini to the work bowl and mix until just incorporated.
  6. Add dry ingredients to moist ingredients and mix until well-blended.
  7. Add optional nuts.
  8. Pour batter into baking pan.
  9. Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool completely on a rack before frosting.
  11. Frost with chocolate buttercream frosting
  12. Serve.
