Mom's Easy Brownie Pudding Cake

Instructions

  1. Preheat oven to 375°.
  2. Get out an ungreased 9-inch square baking pan and set aside.
  3. In a large mixing bowl, whisk the dry ingredients.
  4. In a small saucepan, melt the butter and remove from heat.
  5. Add the buttermilk and vanilla to the melted butter and whisk to combine.
  6. With a spatula stir the buttermilk mixture into the dry ingredients.
  7. Fold the optional walnuts into the batter.
  8. Spread the batter into the ungreased 9-inch square baking pan.
  9. Bring 1½ cups water to a boil.
  10. In a small bowl, whisk together ⅓ cup brown sugar and 3 tablespoons cocoa powder for the topping.
  11. Sprinkle the topping over the batter.
  12. Pour the boiling 1½ cups water over the batter. DO NOT STIR.
  13. Bake for 30 to 35 minutes, or until a toothpick inserted in the cake part comes out with just a few crumbs attached. DO NOT OVERBAKE: The brownie topping should be moist and the pudding underneath should ooze out when served.
  14. Serve warm with vanilla ice cream or whipped cream.

An easy and fun dessert. Boiling water is poured over the batter. After baking the water magically disappears leaving a tasty chocolate pudding under a brownie topping.

Best served warm out of the oven and topped with vanilla ice cream!

This is a classic recipe popularized in the late 1800's and still a favorite today.

Mom's version is less sweet than some, but seems just right to me.
