Easy Mocha Fudge Pudding Cake

Ingredients
Baking Pan:
- Ungreased 9-inch square baking pan
Dry Ingredients:
- 1 cup flour
- ¾ cup brown sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
Butter and Unsweetened Chocolate To Be Melted:
- ½ cup butter
- 1-ounce unsweetened baking chocolate
Moist Ingredients:
- ½ cup buttermilk
- 1 teaspoon vanilla extract
Optional Walnuts:
- ½ cup finely ground walnuts (optional)
Topping:
- ¼ cup sugar
- ¼ cup brown sugar
- ¼ cup unsweetened cocoa powder

Preheat oven to 350°.
- Get out an ungreased 9-inch square baking pan and set aside.
- In a large mixing bowl, whisk the dry ingredients.
- In a small saucepan on low heat, melt the butter and unsweetened baking chocolate. Remove from heat.
- Add the buttermilk and vanilla to the butter and chocolate mixture whisking to combine.
- With a spatula stir the buttermilk and chocolate mixture into the dry ingredients.
- Fold the optional walnuts into the batter.
- Spread the batter into the ungreased 9-inch square baking pan.
- Bring 1 cup of strong coffee to a simmer; remove from heat.
- In a small bowl, whisk together ¼ cup sugar, ¼ brown sugar and ¼ unsweetened cocoa powder.
- Sprinkle the topping over the batter.
- Pour the hot coffee over the batter. DO NOT STIR.
- Bake for 35 to 40 minutes, or until center is almost set DO NOT OVERBAKE: The fudge topping should be moist and the pudding underneath should ooze out when served.
- Serve warm with a scoop of vanilla ice cream.

Makes 6 servings.An easy and fun dessert. Hot coffee is poured over the batter. The coffee is absorbed into the batter leaving a mocha fudge cake with a mocha pudding underneath.
Best served warm out of the oven and topped with vanilla ice cream!
