Cherry Chocolate Teacakes

Ingredients
Ingredients to be Creamed:
- 1 cup butter, softened (2 sticks)
- ¼ cup confectioners sugar
Vanilla:
Dry Ingredients:
- 2¼ cups flour
- ⅛ teaspoon salt
Cherries, Chocolate, and Optional Nuts
- ¾ cup finely chopped tart dried cherries
- ½ cup semi-sweet mini chocolate chips
- ½ cup finely chopped walnuts (optional)

Preheat oven:
Standard Oven: 400° | Convection Oven: 375°
- In a stand mixer using the paddle attachment, cream butter and confectioners sugar until light and fluffy.
- Mix in vanilla.
- Add dry ingredients and mix on low speed until incorporated.
- Add cherries, mini chocolate chips and optional nuts, mixing on medium speed until dough pulls together.
- Shape into 1-inch balls.
- Place on ungreased cookie sheet.
- Bake until set, but not brown; about 10 to 12 minutes.
- Cool cookies on a rack.
- Once cookies are cool prepare confectioners sugar icing for baked goods:
- In a small saucepan on low heat, melt 2 tablespoons butter.
- Remove from heat and whisk in confectioners sugar and vanilla.
- Whisk in 1 teaspoon of hot water at a time, until desired consistency is reached; you should be able to easily coat a spoon.
- Dip tops of cooled cookies in icing and return to cooling rack.
- NOTE: If icing becomes too thick whisk in a teaspoon of hot water.
- Allow icing to set.
- Serve.
