Curried Pea Salad
Ingredients
Bacon:
- 4 slices of bacon, baked or fried until crisp and then crumbled into small pieces
Vegetables:
- 16-ounces frozen green peas (2 cups), cooked and drained
- ¼ red onion, finely chopped
Optional peanuts:
- ¼ cup coarsely chopped peanuts (optional)
Dressing:
- ⅓ cup mayonnaise
- 1 teaspoon curry powder
- ½ teaspoon sugar
- ½ teaspoon salt
- ¼ teaspoon ground black pepper

Cook bacon and place on a paper towel to cool.
- Cook peas, drain and set aside to cool.
- Crumble bacon into small pieces; set aside.
- Place peas in a medium-sized bowl.
- Chop onion and add to bowl.
- Add crumbled bacon to the bowl.
- Add optional peanuts to the bowl.
- Whisk together dressing ingredients.
- Add dressing to bowl.
- Toss salad until coated with the dressing.
Comments
Serves 4 to 6.Refrigerate unused portions.
