Mini Donut Muffins (Doughnut)

Instructions

  1. Preheat oven to 400°.
  2. Grease mini-muffin pans and set aside.
  3. In a large bowl mix together all dry ingredients.
  4. In a medium bowl whisk together moist ingredients.
  5. Add moist ingredients to dry ingredients.
  6. Mix until dry ingredients are moistened.
  7. Divide the batter among the muffin cups.
  8. Bake until a toothpick inserted comes out clean, 6 to 7 minutes.
  9. If you are applying a cinnamon sugar or confectioners sugar topping, do so before donut muffins have cooled.
  10. If you are glazing or frosting the donut muffins, allow them to cool on a rack and then dip in glaze of your choice.

  12. Serve immediately.

Yields about 4 dozen mini donut muffins.

Cinnamon Sugar Topping: Add ½ cup sugar and 2 teaspoons ground cinnamon to a paper lunch sack. Shake to mix. Tip donut muffins out of pan onto a cooling rack. Place 3 to 4 warm donut muffins in the sack and shake to coat with cinnamon sugar. Remove from bag and repeat process until all muffins are coated with cinnamon sugar.

For Confectioners Sugar Topping: Add ½ cup confectioners sugar to a paper lunch sack. Tip donut muffins out of pan onto a cooling rack. Place 3 to 4 warm donut muffins in the sack and shake to coat with confectioners sugar. Remove from bag and and repeat process until all muffins are coated with confectioners sugar.

For half a recipe Confectioners Sugar Icing For Baked Goods: On low heat melt 1 tablespoon butter in a small saucepan. Remove from heat and whisk in ½ cup confectioners sugar and ½ teaspoon vanilla. Stir in 1 teaspoon of hot water at a time, until desired consistency is reached. Dip donut muffins in glaze. Serve.

For half a recipe Chocolate Glaze For Baked Goods: On low heat melt 1 ounce unsweetened chocolate and 1 tablespoon butter in a small saucepan. Remove from heat and whisk in ½ cup confectioners sugar and ½ teaspoon vanilla. Stir in 1 teaspoon of hot water at a time, until desired consistency is reached. Dip donut muffins in chocolate glaze. Serve.

For Confectioners Sugar Glaze: Whisk together ½ cup confectioners sugar and 2½ tablespoons boiling water. Tip muffins out of pan onto a cooling rack. Dip donut muffins in glaze. Serve.

For half a recipe Maple Glaze For Baked Goods: Combine 1 tablespoon melted butter, ½ cup confectioners sugar, and 1 teaspoon maple flavoring. Add 1 teaspoon of hot water at a time, until desired consistency is reached. Dip donut muffins in maple glaze. Serve.
