Easy Black Bean Soup
Ingredients
For Single recipe
(Makes 4 one cup servings)
Vegetables to Sauté:
- 1 tablespoon vegetable oil
- ¼ onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and finely chopped
- 1 serrano pepper, seeded and finely chopped (optional, use for more heat)
Black Beans and Chicken Broth:
- Two 15-ounce cans of black beans, rinsed and drained
- 1 cup chicken or vegetable broth
Seasonings:
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon ground cumin
- ¼ teaspoon ancho chile powder
- ½ cup chopped cilantro
Lemon and Lime Juice:
- 1½ teaspoons fresh lemon juice
- 1½ teaspoons fresh lime juice
Optional Toppings:
- Sour cream
- Queso cheese
- Fresh chopped cilantro

Instructions

In a medium-sized saucepan, heat oil on medium heat.
- Add chopped onion, garlic, jalapeño, and serrano peppers.
- Sauté until vegetables are soft and golden brown in color; 5 to 10 minutes.
- In a blender, puree beans and chicken broth until beans are coarsely ground up.
- Pour bean mixture into saucepan.
- Add seasonings.
- Bring to a simmer, cover, and cook for 20 minutes.
- During the last 5 minutes of cooking time, add the lemon and lime juice.
- Ladle soup into small serving bowls (about 1 cup per bowl).
- Sprinkle with 1 to 2 teaspoons queso cheese (optional).
- Add a dollop of sour cream (optional).
- Sprinkle with freshly chopped cilantro.
- Serve.
