Easy Chicken Curry

Ingredients

Chicken:

Onion, Carrot, Cauliflower and Jalapeño pepper:

Potato and Garlic:

Flour and Spice Thickening Mixture:

Broth and Coconut Milk:

Peas, broccoli and Cabbage:

Ginger, Sugar and Salt:

Rice:

Instructions

  1. Heat a large skillet on medium-high.
  2. Add 1 tablespoon vegetable oil.
  3. Add cubed chicken to the skillet and cook until lightly browned; 5 minutes.
  4. Remove chicken to a plate and set aside.
  5. Turn heat down to medium-low and add the butter.
  6. Add chopped onion, carrot, cauliflower and pepper; cooking 5 to 10 minutes or until onion is golden in color.
  7. Toss in potatoes and garlic; cooking for an additional minute.
  8. In a small bowl whisk together flour and spices.
  9. Add spice mixture to the skillet and stir to coat the vegetable mixture.
  10. Add the chicken to the skillet.
  11. Stir in the broth and coconut milk.
  12. Add the peas, broccoli, and cabbage.
  13. Stir in the ginger, sugar and salt.
  14. Bring to a simmer, cooking uncovered on low heat for 15 to 20 minutes.
  15. Add coconut milk if mixture is too thick.
  16. Adjust salt to taste.
  17. Serve on Steamed Rice.
