BBQ Foil-Wrapped Baby Back Ribs

Instructions

  1. In a small bowl, whisk dry rub ingredients.
  2. Prepare four 18x24-inch sheets of heavy duty aluminum foil.
  3. Season both sides of each rack of ribs evenly with the dry rub.
  4. Place the first rack lengthwise on 1 sheet of foil.
  5. Bring the two long ends of the foil together and fold over to make a ½-inch seam. Continue folding the seam over on itself until the foil is snug against the rack of ribs.
  6. Fold each short end of the foil over to make a 1-inch seam. Continue folding the end seam over on itself until secured against the ribs.
  7. Place the first foil wrapped packet of ribs seam side down on the next sheet of foil.
  8. Following the steps above, pull the two long ends of the second sheet of foil up and over the first foil pack and fold over with a secure seam; then do the same with the ends of the foil.
  9. Follow the same steps to wrap the second rack of ribs with the remaining 2 sheets of foil.
  10. Refrigerate the two foil-wrapped packets of ribs for 2 to 8 hours, preferably overnight.
  11. Brush the cooking grates on the grill clean.
  12. Heat grill to medium with a temperature of approximately 350° to 400°.
  13. Place the two foil packs of ribs on the grill meaty side up.
  14. Grill the ribs on direct medium heat for 1 hour and 15 minutes with lid closed; flipping the packets over after 35 minutes for even grilling. NOTE: Handle the packets carefully making sure not to pierce the foil.
  15. Remove the foil packs from the grill and allow to rest for 10 minutes.
  16. Carefully and slowly open the foil packets being mindful of the steam within that will be released. NOTE: It may be easier to poke a few holes in the inner packet to release any steam and then tear the foil apart.
  17. Remove the ribs from the foil packs and place meaty side up on the BBQ grill. Discard the rendered fat and foil.
  18. Grill the ribs over direct medium heat with the lid closed for 10 to 12 minutes until they are sizzling and lightly charred, turning and basting once or twice with homemade barbecue sauce or store bought barbecue sauce of your choice.
  19. Remove from the grill and let rest for 5 minutes.
  20. Serve with the remainder of the barbecue sauce.

Wrapping the ribs in foil will lock in all of the moisture and flavor and will cut the grilling time down substantially.

Why use baby back ribs when grilling? Baby back ribs are taken from the top of the rib cage close to the loin of the pig and will render a smaller and more tender cut of meat.
