How To Cook Black-Eyed Peas In An Instant Pot
- Overnight soaking time: 8 to 12 hours
- Quick soaking time: 1 hour
- Pressure cooking time: 20 minutes
- Natural release: 10 to 15 minutes

- 1 pound dried black-eyed peas (about 2½ cups)
- 8 cups water

- 2 teaspoons salt
- 1 tablespoon vegetable oil

Overnight Soaking:
- In a colander, rinse and pick through the black-eyed peas to remove any debris.
- Pour black-eyed peas into a large bowl.
- Cover black-eyed peas by 2-inches of water (about 8 cups).
- Let black-eyed peas soak overnight or at least 8 hours.
- Drain the black-eyed peas and rinse well with cool water before cooking.
- Quick Soaking:
- In a colander, rinse and pick through the black-eyed peas to remove any debris.
- Pour black-eyed peas into Instant Pot.
- Add enough water to cover the black-eyed peas.
- Add 2 teaspoons salt.
- Press "Sauté" on the cooker. Heat water and beans to boiling; boil uncovered for 2 minutes.
- Turn off Instant Pot; place lid on Instant Pot and let black-eyed peas stand for 1 hour.
- Pour soaked black-eyed peas into a colander, rinse and drain with cool water.
- Instant Pot Cooking:
- Transfer soaked, rinsed and drained black-eyed peas to the Instant Pot.
- Add enough cold water to cover by 1-inch (about 6 to 8 cups of water).
- NOTE: Make sure black-eyed peas and water do not go above the halfway fill mark on the inside of the pot. The black-eyed peas absorb water as they cook and need room for expansion!
- Add 2 teaspoons salt and 1 tablespoon vegetable oil.
- NOTE: The oil will prevent foam from clogging the pressure cooker's vent.
- Close and lock lid.
- Check to make sure the steam release handle points to "Sealing".
- Press the "Manual" or "Pressure Cook" button and set the timer for 20 minutes.
- Note: Because of the volume of water in the pot it may take up to 10 to 15 minutes for the Instant Pot to come up to pressure before it sets the 20 minute clock.
- Allow the cooker to cool down naturally until the float valve drops down. This can take up to 15 minutes.
- Carefully unlock and remove the pressure cooker lid.
- Drain black-eyed peas in a colander.
- Refrigerate or freeze unused black eyed peas.
