Kale, Orange, Cranberry and Sunflower Seed Salad

Ingredients

Kale:

Orange:

Cranberries and Sunflower Seeds:

Dressing:

Optional Croutons:

Instructions

  1. Rinse off kale leaves and pat water off with a dry towel.
  2. Remove ribs from kale leaves and toss.
  3. Finely chop kale.
  4. Add chopped kale to a large mixing bowl.
  5. Peel and chop orange and add to bowl.
  6. Add coarsely chopped dried cranberries and sunflowers to bowl.
  7. Toss kale mixture.
  8. In a small bowl; whisk dressing ingredients until sugar has dissolved.
  9. Add dressing to kale mixture and toss to incorporate.
  10. Serve as is or with optional croutons on the side.

Comments

This is a sweet salad so the addition of croutons served on the side will really complement it!

Refrigerate unused portions in an airtight container for up to 3 days but note that the kale leaves will wilt a bit.
