Kale, Orange, Cranberry and Sunflower Seed Salad

Ingredients
Kale:
- 1 bunch kale, stems removed and finely chopped
Orange:
- 1 orange, peeled and chopped (navel, cara cara or blood orange is fine)
Cranberries and Sunflower Seeds:
- ⅓ cup dried cranberries, coarsely chopped
- ⅓ cup sunflower roasted seeds (salted or unsalted)
Dressing:
- ⅓ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Optional Croutons:
Instructions

Rinse off kale leaves and pat water off with a dry towel.
- Remove ribs from kale leaves and toss.
- Finely chop kale.
- Add chopped kale to a large mixing bowl.
- Peel and chop orange and add to bowl.
- Add coarsely chopped dried cranberries and sunflowers to bowl.
- Toss kale mixture.
- In a small bowl; whisk dressing ingredients until sugar has dissolved.
- Add dressing to kale mixture and toss to incorporate.
- Serve as is or with optional croutons on the side.
Comments
This is a sweet salad so the addition of croutons served on the side will really complement it!Refrigerate unused portions in an airtight container for up to 3 days but note that the kale leaves will wilt a bit.
