Oven Roasted Turnips
Ingredients
Olive Oil For Baking:
- 1 tablespoon olive oil for baking sheet
Turnips:
- 4 to 6 medium-sized turnips; tops and bottoms removed and peeled
Marinade:
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground thyme
- ¼ teaspoon ground rosemary
- Zest from one small lemon
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
Optional Parsley or Chive Garnish:
- 1 tablespoon finely chopped parsley or chives
Instructions

Preheat oven to 400°.
- Lightly oil a cookie sheet or pizza pan with 1 tablespoon olive oil.
- In a large bowl whisk marinade ingredients.
- Slice tops and bottoms off of turnips and peel.
- Cut turnips into eighths.
- Add turnips to marinade.
- Toss turnips to coat with marinade.
- Spread turnips out on the baking sheet.
- Bake for 30 minutes, tossing with a spatula 15 minutes through the baking time. Turnips are ready to eat when golden in color and tender when pierced with a knife.
- Remove to a serving bowl, sprinkle with fresh finely chopped parsley or chives.
- Serve.

Makes 4 servings.Turnips versus Rutabagas: Turnips are slightly smaller than rutabagas. Turnips have a white and purple exterior and a white interior. Turnips are slightly less sweet than rutabagas, however, roasting turnips will bring out a nice mellow and sweet flavor.
Turnips are a great substitute for potatoes. Turnips are much lower in carbs than potatoes and provide a wide variety of nutrients.
Medium-sized turnips should be about 2 to 3 inches in diameter.
