Cake is done when it springs back from a light touch and a toothpick inserted in the center comes out clean.
Remove cake pans from oven.
Let cool on a rack for exactly 10 minutes.
Cover another rack with a piece of wax paper; place wax paper side down on top of layer and invert as a unit. Remove pan.
Place original rack over the bottom of the layer resting on the first rack; turn over both racks so layer is right side up.
Repeat with other layer(s).
Allow layers to cool completely on racks before frosting.
NOTE: If you do not have 4 cooling racks you can cover the bottom of an empty cake pan with waxed paper and invert your first layer onto the bottom of the empty pan. Repeat with remaining layers. Let cool on a rack.
