Strawberry Glacé Pie

Instructions

  1. If using the optional cream cheese remove from the refrigerator and set aside so that it can come to room temperature.
  2. Bake pie shell; set aside to cool.
  3. Remove stems from about 1½ cups of strawberries.
  4. Place the 1½ cups of strawberries in a blender and add a ½ cup of water. Pulse until the mixture is finely pureéd.
  5. In a medium saucepan whisk sugar and cornstarch.
  6. Pour the pureéd strawberries into the sugar and cornstarch mixture and whisk to incorporate.
  7. Over medium heat cook the strawberry and sugar mixture, whisking constantly until the mixture thickens and boils.
  8. Boil and stir for 1 minute; remove from heat and cool until mixture is just barely warm.
  9. If using optional cream cheese, beat the cream cheese until it is smooth and easy to spread with a spatula.
  10. Gently spread the cream cheese over the bottom of the baked and cooled pie shell. NOTE: The cream cheese adds a nice zingy flavor to the pie and also prevents the crust from becoming soggy.
  11. Remove the stems from 5 cups of fresh strawberries.
  12. Strawberries can be prepared by slicing or leaving whole. You can also use a combination of sliced and whole strawberries. NOTE: If using whole strawberries try to pick berries on the smaller side so that they are easy to eat in one bite.
  13. Place the 5 cups of sliced/whole strawberries in the pie shell.
  14. Pour the cooled strawberry glacé over the top of the sliced strawberries.
  15. Cover the pie with waxed paper and refrigerate for at least 3 hours.
  16. Serve with 1 recipe Whipped cream.

Comments

Ideally, this pie is best eaten the same day it is made. However, uneaten portions can be refrigerated in an airtight container for up to 2 days.

Why do you spread cream cheese over the baked crust? It adds a nice zing of flavor and prevents the crust from getting soggy. If you do not like cream cheese just omit from the recipe.

Strawberries in the pie can be left whole or sliced. If using whole strawberries try to pick smaller berries.

Glacé is pronounced "gla sey".

Glacéd fruit refers to fruit that has been glazed in a sugar syrup. Glacé for fresh fruit pies is made by mashing berries and cooking them with a cornstarch and sugar syrup and then pouring the glacé over fresh berries. The glacé adds shine and color to the pie.
