Sweet and Sour Meatballs

Ingredients
For Single recipe
(Makes 20 to 25 One-inch meatballs)
Ingredients For Meatballs:
- 1 pound lean ground beef
- ½ cup cracker crumbs (approximately 9 individual saltines crumbled)
- 2 tablespoons milk
- 1 egg
- ¼ small onion, finely chopped
- 1 clove garlic, minced
- 1½ teaspoons soy sauce
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 2 tablespoons vegetable oil for the frying pan
Ingredients For Sauce:
- ⅛ cup brown sugar
- ¼ cup soy sauce
- ¼ cup water
- ⅛ cup apple cider vinegar
- ¼ teaspoon ground ginger (or ½ teaspoon fresh grated ginger)
- Juice from one drained 20-ounce can of pineapple tidbits, set aside pineapple tidbits
- 1½ teaspoons cornstarch
Vegetables and Pineapple:
- 2 carrots sliced
- 1 yellow or red pepper, chopped
- ½ onion, chopped
- One 20-ounce can pineapple tidbits, drained (set aside juice for sauce)

Ingredients For Meatballs:
- 1½ pound lean ground beef
- ¾ cup cracker crumbs (approximately 13 individual saltines crumbled)
- 3 tablespoons milk
- 2 eggs
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon salt
- ½ teaspoon ground pepper
- 2 tablespoons vegetable oil for the frying pan

- ¼ cup brown sugar

- ½ cup water
- ¼ cup apple cider vinegar
- ½ teaspoon ground ginger (or 1 teaspoon fresh grated ginger)
- Juice from 2 drained 20-ounce cans of pineapple tidbits, set aside pineapple tidbits

- 3 carrots sliced
- 2 yellow or red peppers, chopped
- ½ onion, chopped
- Two 20-ounce cans pineapple tidbits, drained (set aside juice for sauce)

Mix together meatball ingredients in a bowl.
- In a separate bowl, mix together ingredients for sauce. Set aside.
- Heat oil in a large frying pan on medium heat.
- Shape meat mixture into 1-inch diameter balls.
- Add to oil.
- Cook 2-5 minutes until lightly browned, turn and brown the other side.
- Add chopped carrots, peppers, onion, and pineapple to frying pan.
- Add sauce.
- Bring sauce to a simmer, turn heat to low.
- Cover and simmer on low for 45 minutes to an hour.
- Serve over steamed rice.
