Zesty Macaroni Salad

Ingredients
For Single recipe
(Makes approximately 4 one cup servings)
Macaroni:
- 8-ounces dried macaroni noodles (heaping 1 cup dried)
Chopped Veggies and Herbs:
- ⅓ cup finely chopped bread and butter pickles
- 1 stalk celery, finely chopped
- 2 tablespoons finely chopped white or red onion
- 3 tablespoons finely chopped fresh parsley
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons capers, chopped
- ¼ teaspoon lemon zest
Dressing:
- ¼ cup mayonnaise
- ¼ cup buttermilk
- 2 teaspoons fresh lemon juice
- 2 teaspoons stone ground mustard
- 1 teaspoon sugar
- ¼ teaspoon ground black pepper
- ¼ teaspoon fresh thyme finely minced (or ¼ teaspoon dried thyme)
- ⅛ salt
Parsley Garnish:
- 1 tablespoon fresh parsley, finely chopped

Chopped Veggies and Herbs:
- ⅔ cup finely chopped bread and butter pickles
- 2 stalks celery, finely chopped
- ¼ cup finely chopped white or red onion
- ¼ cup + 2 tablespoons finely chopped fresh parsley
- ¼ cup fresh dill, finely chopped
- ¼ cup capers, chopped
- ½ teaspoon lemon zest
Dressing:
- ½ cup mayonnaise
- ½ cup buttermilk
- 4 teaspoons fresh lemon juice
- 4 teaspoons stone ground mustard
- 2 teaspoons sugar
- ½ teaspoon ground black pepper
- ½ teaspoon fresh thyme finely minced (or ½ teaspoon dried thyme)
- ¼ salt
Parsley Garnish:
- 2 tablespoons fresh parsley, finely chopped
Instructions

Cook macaroni noodles as directed.
- Rinse and drain cooked macaroni; set aside to cool.
- In a medium bowl add chopped veggies and herbs.
- Add cooled macaroni to the bowl and toss to combine.
- In a small bowl whisk together dressing ingredients.
- Pour dressing over macaroni mixture; toss to incorporate.
- Refrigerate for about 30 minutes to allow the dressing to thicken up and meld with the macaroni mixture.
- If necessary add salt to taste.
- Sprinkle finely chopped fresh parsley over the salad.
- Serve.
Comments
Refrigerate unused portions in a sealed container, should keep for several days.
