Pulled Pork Sandwiches


For  Single recipe    (Makes 5 to 6 sandwiches)


  1. In large skillet (preferably cast iron) heat oil.
  2. Add onion and yellow or red pepper.
  3. Sauté until the onion is golden brown; 10-15 minutes.
  4. Add pork, pan drippings, salt, and pepper.
  5. Mix in ¼ cup barbecue sauce. Add more sauce as needed.
  6. Cook on low heat until heated through, 5-10 minutes.
  7. Spoon pork onto bottom half of hamburger bun.
  8. If you want to serve your pulled pork sandwiches in a traditional way, top with 2 to 4 tablespoons optional creamy coleslaw.
  9. Cover with top bun and serve.
