Brownies With Salted Caramel Oatmeal Crust

Ingredients

(Makes 16 brownies)
- Grease sides of a 8x8x2-inch square baking pan; set aside
SALTED OATMEAL CRUST
Dry Ingredients:
- ⅓ cup flour
- ¼ teaspoon baking soda
- ⅛ teaspoon salt (omit if using salted butter)
Brown Sugar and Oats:
- ½ cup dark brown sugar
- 1 cups oats
Butter:
- ⅓ cup butter, melted (5½ tablespoons)
Flaked Sea Salt For Oatmeal Crust:
- ¼ teaspoon flaked sea salt
BROWNIE TOPPING
Brownie Ingredients To Be Melted:
- 3 ounces unsweetened baking chocolate
- ½ cup butter (1 stick)
Ingredients To Add to Melted Chocolate and Butter:
- 1 cup packed brown sugar
- 2 eggs, slightly beaten
- ½ teaspoon vanilla extract
- ¾ cup flour
- ½ teaspoon baking powder
- ¼ teaspoon salt (omit if using salted butter)
Flaked Sea Salt For Brownie Batter:
- ¼ teaspoon flaked sea salt

- Grease sides of a 13x9x2-inch oblong cake pan, set aside
SALTED OATMEAL CRUST
Dry Ingredients:
- ⅔ cup flour
- ½ teaspoon baking soda
- ¼ teaspoon salt (omit if using salted butter)
Brown Sugar and Oats:
- 1 cup dark brown sugar
- 2 cups oats
Butter:
- ⅔ cup butter, melted (11 tablespoons)
Flaked Sea Salt For Oatmeal Crust:
- ½ teaspoon coarse sea salt
BROWNIE TOPPING
Brownie Ingredients To Be Melted:
- 6 ounces unsweetened baking chocolate
- 1 cup butter (2 sticks)
Ingredients To Add to Melted Chocolate and Butter:
- 2 cups packed brown sugar
- 4 eggs, slightly beaten
- 1 teaspoon vanilla extract
- 1½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt (omit if using salted butter)
Flaked Sea Salt For Brownie Batter:
- ½ teaspoon flaked sea salt
Instructions

Preheat oven to 350°.
- Grease sides of baking pan and set aside.
- Salted Oatmeal Crust:
- In a medium bowl, whisk together flour, baking soda, and salt for oatmeal crust.
- Whisk in brown sugar.
- Stir in oats.
- Stir in melted butter until mixture is crumbly.
- Press the oatmeal mixture into the baking pan.
- Measure out flaked sea salt for oatmeal crust and sprinkle over the top.
- Bake the crust for 12 to 15 minutes, or until golden brown.
- While the crust is baking, prepare the brownie topping.
- Brownie Topping:
- In a medium saucepan melt the unsweetened chocolate along with the butter on low heat, stirring constantly.
- Remove melted mixture from the heat.
- Using a big spoon or spatula, stir in the brown sugar and vanilla extract.
- Stir in the eggs.
- Add the dry ingredients and stir until blended.
- Spread the brownie mixture over the baked oatmeal crust.
- Measure out the flaked sea salt for the brownie topping and sprinkle over the brownie mixture.
- The oven should still be set at 350°.
- Bake for 30 to 35 minutes or until brownies begin to pull away from the sides of the pan and a toothpick inserted in center comes out clean.
- Cool, cut and serve.
