Cranberry Orange Sweet Bread

Ingredients

(Makes 1 Loaf of Bread)
Ingredients To Be Creamed:
- ½ cup butter (1 stick)
- ⅔ cup white sugar
Moist Ingredients To Beat In:
- 2 eggs
- ½ teaspoon vanilla
- Zest of ½ an orange
- 1 tablespoon fresh orange juice
Dry Ingredients:
- 1½ cups flour
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ⅛ teaspoon ground cardamom
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon salt
Buttermilk:
Cranberries:
Optional Pecans:
- ½ cup coarsely chopped pecans (use your fingers to break pecan halves into coarse pieces)
Orange Glaze:
- 2 tablespoons sugar
- 2 teaspoons fresh orange juice

Ingredients To Be Creamed:
- 1 cup butter (2 sticks)
- 1⅓ cups white sugar
Moist Ingredients To Beat In:
- 4 eggs
- 1 teaspoon vanilla
- Zest of 1 orange
- 2 tablespoons fresh orange juice
Dry Ingredients:
- 3 cups flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon ground cardamom
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Buttermilk:
Cranberries:
Optional Pecans:
- 1 cup coarsely chopped pecans (use your fingers to break pecan halves into coarse pieces)
Orange Glaze:
- ¼ cup sugar
- 1 tablespoon plus 1 teaspoon fresh orange juice
Instructions

Generously grease standard loaf pan(s); set aside.
- Preheat oven to 350°.
- Cream butter and sugar until light and fluffy in texture.
- Beat in eggs, vanilla, orange juice, and orange zest.
- Add dry ingredients to work bowl.
- With mixer on lowest setting, slowly add buttermilk to the work bowl; scraping sides as needed.
- Turn mixer up to medium-high and beat until batter is smooth; 30 seconds to 1 minute.
- Mix in cranberries and optional pecans.
- Pour batter into loaf pan(s).
- Bake for 50 to 60 minutes. Bread is done when a toothpick inserted in the center comes out clean.
- Remove from oven.
- Immediately brush or spoon the glaze over the loaf or loaves.
- Let cool on a rack for approximately 30 minutes.
- Turn out and place on rack glaze side up to cool for another 30 minutes.
- Serve or cool completely and wrap in foil and refrigerate or freeze.
