How To Cook Dried Chickpeas In An Instant Pot (Garbanzo Beans)
- Overnight soaking time: 8 hours
- Quick soaking time: 1 hour
- Pressure cooking time: 25 minutes
- Natural release: 10 to 15 minutes

- 1 pound dried chickpeas (about 2½ cups)
- 8 cups water
- 2 teaspoons salt

- 1 tablespoon vegetable oil

Overnight Soaking:
- In a colander, rinse and pick through the chickpeas to remove any debris.
- Pour chickpeas into a large bowl.
- Cover chickpeas by 2-inches of water (about 8 cups).
- Add 2 teaspoons salt to water.
- Let chickpeas soak overnight or at least 8 hours.
- Drain the chickpeas and rinse well with cool water before cooking.
- Quick Soaking:
- In a colander, rinse and pick through the chickpeas to remove any debris.
- Pour beans into Instant Pot.
- Add water to cover the beans.
- Add 2 teaspoons salt.
- Press "Sauté" on the cooker. Heat water and beans to boiling; boil uncovered for 2 minutes.
- Turn off Instant Pot; place lid on Instant Pot and let beans stand for 1 hour.
- Pour soaked chickpeas into a colander, rinse and drain with cool water.
- Instant Pot Cooking:
- Transfer soaked, rinsed and drained chickpeas to the Instant Pot.
- Add enough cold water to cover by 1-inch (about 6 to 8 cups of water).
- NOTE: Make sure chickpeas and water do not go above the halfway fill mark on the inside of the pot. The beans absorb water as they cook and need room for expansion!
- Add 2 teaspoons salt and 1 tablespoon vegetable oil.
- NOTE: The oil will prevent foam from clogging the pressure cooker's vent.
- Close and lock lid.
- Check to make sure the steam release handle points to "Sealing".
- Press the "Manual" or "Pressure Cook" button and set the timer for 25 minutes.
- Note: Because of the volume of water in the pot it may take up to 20 minutes for the Instant Pot to come up to pressure before it sets the 25 minute clock.
- Allow the cooker to cool down naturally until the float valve drops down. This can take up to 15 minutes.
- Carefully unlock and remove the pressure cooker lid.
- Drain chickpeas in a colander that has been placed over a large bowl.
- Allow chickpeas and the separate bowl of liquid to cool.
- Save out some of the chickpea liquid if making Hummus.
- NOTE: If freezing or refrigerating chickpeas for future use add ½ cup of the chickpea liquid to each container. The liquid may be needed when making Hummus.

Check Your Sealing Ring Periodically:
Step One: Check to make sure the sealing ring is installed correctly. If it is installed correctly then see next step.
Step Two: Replace sealing ring as it may be damaged or worn out.
