Spicy Roasted Chickpeas (Garbanzo Beans)

Ingredients

(Makes 1 cup)
- 8x8x2-inch square baking pan or 10-inch cast iron skillet
Olive Oil and Spice Mixture:
- 3 tablespoons olive oil
- 1 to 2 cloves garlic, minced
- ½ teaspoon ground cumin
- ½ teaspoon ground paprika
- Dash of red cayenne pepper
- Dash of ancho chile powder
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Garbanzo Beans:
- One 15.5-ounce can chickpeas (garbanzo beans), rinsed and drained or 1⅔ cups cooked chickpeas

- 13x9x2-inch oblong baking pan or 13-inch cast iron skillet
Olive Oil and Spice Mixture:
- 6 tablespoons olive oil
- 2 to 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ⅛ teaspoon red cayenne
- ⅛ teaspoon ancho chile powder
Garbanzo Beans:
- Two 15.5-ounce cans chickpeas (garbanzo beans), rinsed and drained or 3⅓ cups cooked chickpeas
Instructions

Preheat oven to 350°.
- In a medium bowl whisk together olive oil, garlic, and spices.
- Add rinsed and drained chickpeas, toss to coat.
- Spread the chickpea mixture in bottom of the baking pan.
- Bake 30 to 40 minutes, stirring occasionally, until garbanzo beans are golden.
- Remove to a serving bowl.
- Serve warm or at room temperature.
Comments
Best eaten just after roasting! Refrigerate unused portions. To reheat stir in medium-high skillet for a few minutes or reheat in microwave.What is the difference between garbanzo beans and chickpeas? They are the same! Chickpea comes from Latin origins and garbanzo comes from Spanish origins.
