Chicken Tacos With Caramelized Onions

  1. Heat oil in a large skillet on medium high. I prefer using my biggest cast iron skillet because it does a really good job caramelizing onions and browning the meat.
  2. Add the onions to the oil. Cook for approximately 20 minutes, stirring occasionally so all onions get caramelized.
  3. Add yellow or red pepper and jalapeño pepper to onion mixture and cook for 10 minutes.
  4. Add chicken to onion mixture.
  5. Mix in cumin, chili powder, salt and pepper. Cook for 10 minutes, or until meat gets slightly browned.
  6. Serve with accompaniments.


To assemble a soft taco:

First, steam the tortillas. For a slide show of this process see how to steam tortillas in the techniques section of my cookbook. Figure on 2 to 3 tortillas per person. Place 6 to 10 tortillas in a glass pie pan or a wide pasta bowl. Cover with a dinner plate. Place in the microwave. Microwave on high for 30 seconds. Check to see if tortillas are warm and pliable. If needed, put back in microwave and heat 10 seconds at a time until done.

Lay tortilla flat. Spread one tablespoon of refried beans in center of tortilla. Add 1 to 2 tablespoons of the chicken mixture. Top with 2 tablespoons Mexican rice, grated cheese, 1 tablespoon guacamole, 2 tablespoons chopped lettuce, 1 tablespoon salsa fresca, and 1 tablespoon sour cream.

Roll one side of tortilla over fillings. Cover with other side of tortilla. Fold bottom up and hold with your hand while eating so that the fillings do not fall out. Note that I gave you amounts of fillings to place in your taco. Portions may vary based on the size of your tortilla and which fillings you like the best or least. Make it to suit your tastes and enjoy!
